Baked Macaroni

I'm procrastinating.

Ingredients:
8-10 oz cooked macaroni or any shaped pasta, follow directions on package
2 Tablespoons butter or margarine
1/4 cup finely chopped onion
3 cloves of garlic, minced
1-2 cups chopped mushrooms (white button mushrooms work fine)
1 can of tuna drained (optional)
1/4 cup flour
2 cups 2% milk
2 cups chedder cheese, shredded or cubed
3/4 cup parmesian cheese, shredded
2 teaspoons salt
pepper to taste
1/4 cup unseasoned breadcrumbs
paprika for garnish

Preheat oven to 350 degrees Farenheit.

1. Melt the butter in a small saucepan on medium high heat and saute the onion, garlic, mushrooms, and tuna together until tender for about 3 minutes.
2. Stir in flour and cook for about 1 to 2 minutes.
3. Mix in milk slowly and bring to a boil. Reduce heat to low and cook until the mixture thickens.
4. Add most of the cheese but reserve about 1/2 cup. Add salt and pepper to taste.
5. Mix sauce in with pasta in a 2 quart cassarole dish.
6. Sprinkle remaining cheese and breadcrumbs on top. Add paprika to taste.
7. Bake until it bubbles and browns slightly (about 30-40 minutes)


Macaroni Florentine: Also try with brocolli florets, green beans, and/or red bell pepper. Add with the mushrooms at the beginning.
