Flourless Chocolate Cake

A few weeks ago was my friend Anthony's birthday and I was crazy busy that day so I didn't have time to go shopping or really bake much before I went. Then, I discovered the worst thing ever to happen to a baker...i was out of flour. It's not such a bad thing I pulled out my Jewish cookbook and looked for Passover recipes. In addition to macaroons (the best cookies in the whole world) this cake is a fun dessert for just such an occaision when you can't use flour (or when you run out). Enjoy!

Ingredients:
7 oz semisweet chocolate
3/4 cup butter (1.5 sticks)
1 cup sugar
4 eggs, separated


Preheat oven to 350 degrees and line a 9" pan with lightly greased parchment paper.
Break the chocolate into small pieces and melt with the butter. Don't melt over the stove, place chocolate & butter into a bowl. Place that bowl into a pan with hot but not boiling water, stir mixture.
Beat the egg yolks with 1/2 cup of sugar. Fold egg yolk mixture into the butter
and chocolate mixture.
Beat egg whites until frothy and gradually add the remaining sugar until stiff peaks form. Fold egg white mixture into the chocolate.
Pour batter into the pan and bake at 350 degrees until a wooden toothpick comes out clean.
